לפרופ' פלד עניין עמוק ומתמשך בחברות ובתרבויות המזרח התיכון, בעבר ובהווה. מחקריו מתמקדים בהיסטוריה התרבותית של הפלסטינים, ובפרט באזרחים הערבים הפלסטינים של מדינת ישראל. עבודתו ההיסטורית משלבת ממדים פוליטיים, חברתיים וכלכליים, ונשענת על סינתזה שבה התרבות, הנתפסת כמרקם רווי משמעויות, ממלאת תפקיד מרכזי.מחקריו משקפים עיסוק רחב בתחומים שונים במדעי הרוח והחברה, ובהם השפה והספרות הערבית, לימודי המזרח התיכון, היסטוריה ואנתרופולוגיה, לצד תחומי האמנות, ובייחוד אדריכלות, שבהם הוא מגלה עניין ארוך שנים.
טרם הצטרפותו למכון בן-גוריון לחקר ישראל והציונות בשנת 2010, לימד פרופ' פלד מגוון קורסים באקדמיה לאמנות ועיצוב בצלאל, באוניברסיטת בן-גוריון בנגב ובאוניברסיטה העברית בירושלים. בין השנים 2010-2004 שימש גם כמרצה בתוכנית המצטיינים הבין-תחומית "אמירים" באוניברסיטה העברית.
